9.10.12 Liam turns 3- a birthday weekend adventure

In our family, birthdays do not last just one day. They are more like birthday weekends, or if we're feeling extra extra special (as Jason usually does every year lol), birthday WEEKS.
This weekend we celebrated Liam turning 3.
Saturday was his actual birthday, so I made him all his favorite foods and we gave him his gifts. His favorite gift was the etch a sketch and also a big purple bouncy ball. We spent the day hanging out at home, and Liam also played on his outdoor climber and wading pool.

Sunday was party day! I decided this year to have it at his very favorite park, here in Newnan. The weather was PERFECT, it stayed right below 80, the sun was shining and there was nice breeze.  
We got there right around 130pm, and while i got everything situated, Jason started up the grill. I know grilling with charcoal is not supposed to be very good for you, but dang, does it ever make the tastiest burgers and hot dogs! Everyone started arriving shortly there after, and it was perfect timing because Liam was ready to go play in the kids castle and get on the swings too, his fav.

I made two cakes. One regular  yellow cake with chocolate icing, and one GFCF chocolate cake with chocolate icing, just for Liam. It turned out realllllly yummy!
I used hodgson mill gluten free chocolate cake mix, which is also casein (dairy free). Its NOT soy free, which is something we trying to keep out of Liams diet as well, but i figured just for this occasion we would  have to be flexible. Such is life! I made the chocolate frosting from scratch (gfcf and sf) using a recipe i found online- here. I used Earth Balance Coconut Spread  instead of butter, and Vanilla Almond milk. The coconut butter, gave the chocolate frosting a coco-nutty flavor that made it taste extra delicious. Most importantly, Liam loved it!

I am blessed to have these beautiful creatures in my life, these little people who have made me view the world in a whole new light. May God bless them always.
